I’d like to share one of my favorite vegetarian recipes I’ve been meaning to post for awhile….quinoa burgers!  It’s crunchy, tasty and best of all, healthy!   Meat lovers and vegetarians alike will love this easy to make dish, I promise!

But first, what is quinoa?  This is quinoa….

 It’s considered a whole grain like rice but it’s actually a seed.  Prepared like rice, it cooks very easily and quicker than most rices.  If I had to describe it to someone, I’d say it’s like a tastier, smaller grained, brown rice.  The  reason why it’s so popular now is that it provides all 9 essential amino acids making it a complete protein.  And it’s almost always organic.  In other words, it’s the superfood of the future!  You can find it at most major supermarkets now.  And without further ado, here’s the recipe courtesy of Eating Well, Living Thin.

2 cups cooked quinoa
1 cup sharp cheddar cheese, shredded
1/2 cup cottage cheese
1/2 cup shredded carrot
3 eggs
3 tablespoons flour
2-3 green onions, sliced
1 clove garlic, minced
1/4 teaspoon sugar
1/4 teaspoon pepper
1/4 teaspoon cumin
1/4 teaspoon salt
olive oil

Combine all the ingredients except the olive oil in a large bowl and mix well.

Heat some olive oil in a large pan over medium heat. Using a half-cup measuring cup, drop quinoa mixture by the cupful into the pan and cook each side for about 5-7 minutes, flipping each patty carefully with a wide spatula.

Serve patties on buns with traditional burger toppings or bunless, as fritters, with chopped tomato, avocado and tomatoes!
